Dqcquoise recipe
Sugar 20 g/Egg white 80g/ Low Gluten Flour 17 g(Sifted)/Almond powder 49g(sifted)/Icing sugar 45g(Sift)
1. Beat the egg white then slowly add in sugar until the meringue is stiff but not dry
2. Add in flour , almond powder , icing sugar and use a wide spatula to fold the ingredients together
3. Fill the mold with batter spread out smoothly , remove the mold
4. Sift some icing sugar on top
5. Wait till the sugar dissolved then add another layer of icing sugar
6. Pre heat the oven at top 180/bottom 150 degrees Celsius for 10 mins(to get color on the surface). Turn the oven to top 150/bottom 150 degrees Celsius 10 ~15 mins
7. Can fill with any choice of fillings
