Types of Yeast:
Rapid-Rise Yeast:
Fastest fermentation speed, but may result in coarser texture. Commonly used for buns and steamed breads (e.g., mantou).
Active Dry Yeast:
Needs to be soaked in warm water (35–40°C) for 5–10 minutes before use. Use when bubbles appear on the surface. Ferments more slowly.
Instant Yeast (This product belongs to this type):
Can be mixed directly with dry ingredients, then add water and stir. Ferments relatively quickly.
Fresh Yeast:
Must be refrigerated. Ferments quickly but has a short shelf life and is prone to spoilage.
You can search the keyword "dry yeast" in the store to find low-sugar types.
To preserve quality, minimize exposure to air during use. After taking the needed amount, reseal the zip-lock tightly to prevent deterioration.
